Candy Marshmallow Popcorn Balls

WARNING:  These are WAY addicting!!!!! 

24 C Popped popcorn (1 C unpopped)
1 16 0z bag of gum drops, cinnamon bears, orange slices...whatever you like!
1 C butter
1/2 C corn syrup
1 1/2 C sugar
1 tsp vanilla
4 C mini marshamallows
Food coloring

1.  Pop up your popcorn and set it aside.
2.  Dice candy up into chunks.  Snip it with kitchen scissors...it's MUCH quicker!
3.  In a medium saucepan, combine the butter, sugar, and corn syrup.  Heat to a boil.  Reduce heat to low and cook for 5 minutes.
4.  Remove from heat.  Add vanilla, marshmallows and food coloring (match it to your candy).
Mix well to get everything melted and combined.
5.  Stir in candy.
6.  Add mixture to your popped popcorn (make sure you use a really large bowl).  Stir it all around until popcorn is well coated.
7.  Form into balls and set on wax paper.
Yields apprx. 15 popcorn balls.

Apple Crisp


Mmmmm.....just finished raking leaves in the front yard and now we just came in for a little lunch and an afternoon college ball game on T.V.  The perfect time to pop an Apple Crisp in the oven!!!  I can smell it already!!!!

Filling:

6 - 8 medium apples
1 tsp cinnamon
1/2 C cold water

Topping:

1 1/2 C flour
3/4 C sugar
1/2 C butter

Slice apples and place in baking dish.  Mix sugar and cinnamon together and sprinkle over apples.  Pour water into apples at corners.
 
Topping:  Mix together sugar and flour.  Cut in butter until crumbly.  Spread evenly over apples.  Bake @ 375 for 1 hour.  Serve with whip cream or vanilla bean ice cream!!!

Wickedly Delicious Topping


Fantastic on pumpkin cakes!!!

1 pt. whipping cream, whipped
3/4 C brown sugar

Whip cream until spreading consistency and stir in brown sugar.  Makes enough topping for a two-layer cake or 24 cupcakes.

Howling Good Licorice Frosting


1/2 C margarine, softened
3 C powdered sugar
2 T milk
1 tsp anise extract
black food coloring (optional)

In a small bowl, cream together margarine and sugar.  Add milk and extract and beat until smooth.  Add black food coloring if desired

Buttery Caramel Sauce


The perfect companion to apples in autumn.  Or pretty much on top of anything anytime of year!

3/4 cup brown sugar
3/4 cup sugar
1/2 cup corn syrup
1/3 cup butter
2/3 cup whipping cream

In a medium saucepan, combine sugars, corn syrup and butter.  Cook over medium heat stirring occasionally until mixture comes to a full boil (5 - 6 minutes).

Remove from heat and cool 5 minutes.  Stir in whipping cream.  Place in a jar and refrigerate to store.  It will thicken as it cools.

Rice Krispy Treats


Okay, these aren't your grandma's rice krispy treats!

2 sticks butter
1/2 brown sugar
1//2 white sugar
1 pkg (10 oz) marshmallows
6 c rice cereal

Microwave butter and sugar for 2 1/2 minutes.  Stir in marshmallows.  Microwave 2 minutes.  Stir in rice cereal.  Pour into 9x13 pan and cool.

Homemade Hot Fudge Sauce

What goes perfect with homemade ice-cream and makes it even that much better?  Lots and LOTS of homemade hot fudge!
This stuff is amazing!  And goes great with bananas if you need a quick late night snack.  Just ask Kim and Nicki.  But be forewarned....you always have way more bananas left over than you do hot fudge!

Ingredients:
1/4 c butter
1 can sweetened condensed milk
1/2 c semi-sweet chocolate chips

Mix all ingredients over low heat in saucepan until combined.  Pour into jars or other container.  Store in fridge. - You  may want to double this recipe....it's THAT good!!!

Roma Nelson's Homemade Ice Cream

I can't believe I found it after all these years!  I don't know if ya'll remember this, or even if you've had the chance to try it before...but let me tell you it's heaven in a cup!!!  We're in charge of the ice cream for the 4th (okay..it's Utah and being as the 4th is on a Sunday it's technially the 3rd!).  I've been craving homemade ice cream for weeks now and Tara just happened to have an ice cream maker  :)  Now the only problem is deciding on what flavors to make.  (Don't worry Tara, I've got the strawberry covered  *wink)

Ingredients:

4 eggs
2 1/4 c sugar
5 c milk
4 c heaving whipping cream
4 1/2 vanilla
1/2 tsp salt
If you're adding fruit - deduct the amount of crushed fruit you add from the amount of milk)

Whip eggs well.  Add sugar to whipped eggs gradually.  Keep whipping till thick.  Continue to beat until very stiff (don't forget to get the edges).  Add remaining ingredients and mix.  Pour into ice cream maker and freeze till done.  (Follow your ice cream maker instructions)

It also makes AMAZING ice cream cookie sandwiches!!!!

Ice Cream Cake


It's feeling hot....hot....HOT outside!  What could be better than this ice cream cake?  Just about nuttin!


Ingredients:

3/4 cup flour
1/4 cup cocoa
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs
1 cup sugar
1/3 cup water
1 teaspoon vanilla
1/2 gallon ice cream, softened
powdered sugar
nuts (optional)

Beat eggs for 5 minutes. In a separate bowl combine the flour, cocoa, baking powder and salt. Add the dry ingredients to the eggs. Then add water, sugar and vanilla. Once well incorporated, spread onto a greased, large cookie sheet. Bake at 350 for 15 minutes. On a dish towel, spread a layer of powdered sugar. When the cake is done, carefully turn it over onto the dish towel. Then roll it up and let cool. When it is done cooling-after about 30 minutes to an hour, unroll, and layer with ice cream and nuts. Roll it back up, wrap in plastic wrap and foil and refrigerate for at least 3-4 hours. Slice and serve!

Lime Cheesecake Bars

Heavenly!  Try them with lemons too!

Ingredients:

1 1/2 cups graham cracker crumbs
1/3 cup sugar
1/3 cup butter-melted
2 packages cream cheese, softened
1 can sweetened condensed milk
2 eggs
1/2 cup lime juice
zest of two limes
lime slices (without the rind)

Combine graham cracker crumbs, sugar and melted butter. Press into a 9x13 pan and bake at 325 for 5 minutes. Let cool. Beat cream cheese until fluffy. Then add sweetened condensed milk. Once well incoporated add eggs, lime juice and lime zest. If you are adding the sliced limes, layer them along the crust. Then pour cheesecake mixture over the top. Bake for another 30 minutes, or until tooth pick comes out clean. Let cool...and enjoy!
